John Olsen’s paintings of food started when he moved to live on the shores of the Mediterranean. His paintings were the identification with this culture.
"My interests and my epiphany with cuisine evolved when I went to that marvellous market La Boqueria, off Barcelona’s Ramblas. I was standing in front of this abundance, all these beautiful coloured vegetables like aubergines, zucchinis, red, green and yellow peppers, clusters of small sardines, prawns and octopus."
When Olsen lived in Deya on the island of Majorca he was taught to cook paella, his local friends would set up and fire cook this splendid cornucopia dish of squid and mussels and other seafood. When he returned to Australia he cooked the Paella for his friends, other painters, writers and poets and it was a sensation, he says, "It was the most beautiful dish to present, this Mediterranean experience changed my life completely, which is why I continue to paint the dish."
